warm bacon potato salad
remember when i told you the way to mr. handsome’s heart is through bacon. well, it just so happens if you want to break news to him, like for instance you spent too much money at the mall, bacon is the perfect aromatic solution.
and so on this very monday, the day that i may have spent too much money on jeans and crop tops, i made the house smell of a bacon in order to deflect the obvious and cushion the blow.

warm bacon potato salad
ingredients:
2 lbs baby red potatoes, halved
1/3 cup white wine vinegar
1 red onion, diced fine
2 cloves garlic
6 slices bacon
1 tablespoon grainy mustard
1 1/2 tablespoons honey
1/4 cup fresh parsley
salt and pepper to taste
method:
add potatoes to a pot of salted cold water and bring to a boil. reduce heat and simmer, for 20 minutes or until fork tender. drain and place in a large bowl covered with foil to keep warm.
in small bowl whisk together vinegar, mustard, honey and salt and pepper. set aside.
meanwhile, cook bacon in large fry pan until crisp. remove from pan with slotted spoon and place on paper-towel lined plate. add onions to the bacon grease and saute till tender approximately 3 minutes, add in garlic during the last minute of cooking time. add vinaigrette and cook for 2-3 minutes until thickened.
add in potatoes, bacon and fresh parsley tossing to coat.
serve warm.
