Frozen Greek Yogurt Bark w/ Pepitas & Dried Cranberries

it's just around the corner.

warmer temperatures,
longer days,
retiring of winter cover ups (yikes)

so with all minds on spring, summer, and the dreaded bathing suit season, today's post will no doubt keep everything in check.  

Frozen Vanilla Greek Yogurt Bark w/ Pepitas & Dried Cranberries
when i was a kid i would always throw my yogurt containers in the freezer before i ate them.  that, or either i would use them as dunking grounds for animal crackers (don't judge, it was delicious.)
the first way was my attempt at trying to eat ice cream every day, without actually getting to eat ice cream every day, even back then i was looking for work arounds, nice to see some things never change.

in any respect this is a delightful snack, full of protein and none of the guilt.  xoxo.




Frozen Vanilla Greek Yogurt Bark w/ Pepitas & Dried Cranberries


Ingredients:
2 cups 2% vanilla greek yogurt
2 Tbsp dried cranberries
1 1/2 Tbsp pepitas

Method:
Spread yogurt into an even layer on parchment lined baking sheet.  Top with cranberries and pepitas and freeze till firm.
Break into pieces and serve.
