Guinness Chocolate Pancakes

for whatever reason march is the only time of year we buy Guinness.  i think it actually might be illegal not to have Guinness in your fridge come St. Patrick's Day.
because we are celebrating St. Patrick's Day all weekend,  this morning i left the pint glass behind and opted to use the beer in my favourite pancake batter.  genius.  also i want to bank some points with mr. handsome for a future shopping trip or two.... double genius.


Guinness Chocolate Pancakes


Ingredients:
1 1/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup + 3-4 Tbsp Guinness beer
4 Tbsp melted butter
1 egg
1 tsp vanilla

whipped cream & maple syrup for serving


Method:
In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In separate bowl, whisk together beer, eggs, and melted butter.  Add to dry ingredients until just moistened.
Spoon batter in large 1/4 cup portions onto lightly oiled griddle or pan.  Cook for 2 to 3 minutes, or until bubbles form on top and the underside is lightly browned.  Flip and cook for an additional minute.
Keep pancakes warm in oven while repeating with remaining batter.
Serve warm with whipped cream and maple syrup (and chocolate sprinkles if your feeling fancy)

Yields 8-10 pancakes.
