Corn + Avocado Flatbread

pizza + avocado = happy me & hunger pangs calmed.

Corn & Avocado Flatbread


Ingredients:
2 pieces naan bread
1 garlic clove, minced
2/3 cup canned peaches & cream corn, drained and patted dry
3 Tbsp red onion, finely chopped
4 bocconcini(fresh mozzarella), sliced
1/2 avocado, diced
olive oil
basil leaves
sea salt & pepper

Method:
Preheat oven to 425F.
Drizzle each piece of bread with olive oil and sprinkle with minced garlic.
Layer bocconcini slices evenly over both pieces of bread and top with corn and onion.  Sprinkle with salt and pepper.
Bake for 10 minutes.
Remove oven and top with avocado and basil.  Enjoy.
