grilled salmon w/ white peach & cucumber salsa
i seem to have gotten myself into the weekly habit of making fresh homemade salsa. it always ups the game for BBQ fish or chicken, and lends itself to the late night tortilla chip vessel snack.
this weeks salsa inspiration was due to some pretty looking peaches that were calling my name from the produce aisle.
it also happens that peaches are one of mr. handsome's favourite fruits, so i guess you could say i was banking on some brownie points too.
grilled salmon w/ white peach & cucumber salsa
ingredients:4 {6-ounce} salmon filets
salt & pepper
3 white peaches, finely chopped
1 cucumber, seeded, finely chopped
1/2 red onion, finely diced
1/2 jalapeno, seeds & ribs removed, minced
juice of half lime
1/2 bunch cilantro, finely chopped
salt and pepper
method:
to make salsa: combine peaches, cucumber, onion, jalapeño, cilantro and lime juice. season to taste with salt and pepper. refrigerate until ready to use.
season fish with salt and pepper.
preheat grill to high heat. turn down to medium and place salmon skin side down on the grill. grill for 6 to 8 minutes to medium doneness, turn and grill on the other side to internal temperature 145F. top fish with salsa and serve.
