grilled vegetables make for the perfect summer side, or even main dish. in fact my life revolves around them during the warmer months; everything from zucchini to corn to even fruit, there is something about cooking and eating outside in the summer heat that just imprints a permanent on my face.
this long weekend was no exception. following some much needed beach time & WMBL baseball playoffs, mr. handsome and i took to the grill for a little BBQ action. on the menu: maple-soy salmon and some grilled broccolini. simple, healthy, and perfect for summer.
all in all, a great conclusion to a wonderful family-filled long weekend, before sinking my life into 3 hours of the bachelorette finale. why do i do this to myself?
l lb broccolini, ends trimmed
2 tablespoons olive oil
2 cloves garlic, minced
pinch red pepper flakes
sea salt & pepper to taste
lemon for serving
preheat outdoor grill to medium-high heat.
in small bowl combine olive oil, garlic, pepper flakes.
drizzle over prepared broccolini tossing to coat. sprinkle with salt and pepper.
place on grill, cooking until tender and charred, turning throughout approximately 7-9 minutes.
remove from heat transfer to plate and squeeze with lemon juice. enjoy.
