Lemon Poppyseed Oatmeal

this morning i decided to create a lemon poppyseed version because, well i'm a lemon fanatic, and although i've mastered the cake, brownies, bread, muffins, parfaits, and pancakes to name i few, i've neglected to make an oatmeal.

Lemon Poppyseed Protein Oatmeal
ingredients:
1 cup quaker oats
2 cups unsweetened vanilla almond milk
2/3 cups egg whites
1 lemon, juiced
2 tablespoons brown sugar
2 teaspoons poppyseeds
1 teaspoon lemon zest
almonds and lemon zest for serving
method:
cook oats as usual on stovetop as per package instructions. after most of the milk has been absorbed, pour in the egg whites and whip vigorously with a whisk until mixture is well blended. increase heat to medium and continue to cook till all of the milk has been absorbed and the egg whites have caused the oats to puff and appear creamy. cover and remove from heat. let oats sit for 5 minutes. stir in brown sugar, lemon juice, poppyseeds and lemon zest.
divide into two bowls.
top almonds and lemon zest if desired.
