no-bake s'mores cookie dough bars


s'mores are a quintessential component to any and every summer campout.
i can't really think of anything better than being fireside and roasting marshmallows to sandwich between graham crackers and chocolate (or if your like me you sub out chocolate for a reese peanut butter cup, try it!!)


being that on this regular tuesday {at least it was yesterday} i was situated at home, campfire-less, i decided instead to take my love for all things s'mores and make a no bake cookie dough bar as a substitute to the classic gooey, sticky treat.


also it means my freezer is now stock piled w/ these gems for a quick go-to whenever the s'more urge strikes.
oh, i'm also gifting these, since i'm pretty sure i can't be trusted.



no-bake s'mores cookie dough bars

ingredients:
1 stick unsalted butter, softened
1 cup light brown sugar
1 teaspoon vanilla
2 cups finely ground graham cracker crumbs
1 cup all-purpose flour
1/2 tsp salt
1 {14-ounce} can condensed milk
1 1/3 cup milk chocolate chips; divided
1 1/3 cup mini marshmallows; divided

method:
line a 9-by-13 inch baking dish with foil, leaving a 2-inch overhang on two sides.  set aside.
in bowl of an electric mixer, mix butter, sugar and vanilla until fluffy.  reduce the speed to low.  add in graham crackers, flour and salt; beat until combined.  add in condensed milk and beat.  stir in 1 cup of each, milk chocolate chips and mini marshmallows.
press into prepared pan and sprinkle the tops with remaining 1/3 cup marshmallows and chocolate chips.  press down lightly with parchment paper and chill until set before cutting into squares.
store in refrigerator in sealed container.
