Mediterranean Saturday Night


Next to Caesar and potato salads, my husbands third favourite is of the Greek variety.  I have to say that we share this in common.  Fresh ingredients, simple in execution, and Feta cheese.  Boom, love it!
It also happens to be Father's Day weekend, and my aim is to please.  It just so happens I'm also the recipient of my own thoughtfulness. #doublewin

Greek Salad


Ingredients:
2 large tomatoes, cut into wedges and chopped
1 medium cucumber, quartered lengthwise and chopped
1 red pepper, chopped 
1/2 red onion, sliced in half-rounds
1/2 cup Kalamata olives, pitted
4 ounces Feta cheese, cubed

vinaigrette:
1/4 cup olive oil
2 Tbsp red wine vinegar
1 1/2 tsp sugar
1 clove garlic, minced
3/4 tsp dried oregano
sea salt & pepper to taste

Method:
In large bowl combine tomatoes, cucumber, pepper, and onions.  Set aside.
To make vinaigrette, place all ingredients in a small container with lid.  Close and shake vigorously until well blended.  Adjust seasonings as necessary.
Pour dressing over tomato mixture tossing tossing to combine.  Add in olives and cheese and toss once more lightly.  Allow to sit for at least 30 minutes before serving.
