Egg & Avocado Breakfast Pizza
Any morning that starts with pizza is a good morning, in fact cold pizza is one of natures great gifts. However, in order to have cold pizza, you would have to have leftovers from the night before, and let's face it how often does that happen with a family of four. Especially my pizza-loving family of four.
Cold pizza. Fail.
Or is it?
It just so happens, I'm rich in eggs and avocados at the moment, so it looks like I still get breakfast pizza after all. #winning. And this one is figure friendly. #doublewinning.
Also, is there anything better then the egg and avocado pairing? Not likely.
Egg & Avocado Breakfast Pizza
Ingredients:1 pita or naan bread
1/2 avocado, mashed
1 egg
lemon juice
sea salt
pepper
cayenne pepper (optional)
Method:
Toast pita in oven until crispy.
Combine mashed avocado with a splash of lemon juice. Season to taste with salt, pepper, and cayenne pepper if using. Spread mixture over toasted pita.
Cook egg as desired, sunny side-up, fried, over easy....and place on top of pita.
eat.
