Lemon Brownies

Brownies = Chocolate.  Yes.

Brownies = Lemon?  Hmmm...a resounding YES!

Lemon brownies or "lemonies" are the best of two worlds colliding in one delicious mouthful.

Lemon Square Tang + Brownie Texture = Awesomeness.  Pure awesomeness.

Cue the angelic voices, I've found a new delicious treat to bring to all future summer BBQs.  Feel free to send invitations my way.

Lemon Brownies

Ingredients:
3/4 cup all-purpose flour
3/4 cup sugar
1/4 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
juice and zest from 1 lemon

glaze:

1 cup powdered sugar
juice from 1 lemon
zest from 1/2 lemon

Method:
Preheat oven to 350F.  Using non-stick spray, spray 8-inch square baking dish.  Set aside.
In large bowl combine flour, sugar and salt.  Mix in the softened butter until well incorporated.  Set aside.
In small bowl whisk together eggs, lemon juice & zest.  Add to flour mixture and mix well.
Pour batter into prepared pan.  Bake for 20-23 minutes.  Do not overbake.
Remove from oven and allow to cool completely.

To make glaze:  whisk together all the ingredients.  Depending on how much juice is in your lemon you may need to add a little extra liquid or powdered sugar to achieve your desired consistency.
Pour 1/2 glaze over cooled brownies, let set.   Pour remaining glaze over and allow to set before cutting into squares.
