Avocado Fries


And the obsession continues....

Avocados.

Help me.  I need an intervention.

In the meantime while you are searching for support groups for me to attend.  I'm just going to sit here and eat a plate of avocado fries.  Yep.  Crispy, warm, and delicious.

On second thought, the support group can wait.  Problem what problem?  I don't have a problem.




Oven Baked Avocado Fries

Ingredients:
2 avocados, halved, peeled and pitted
1/3 cup all-purpose flour
2 eggs, lightly whisked
1 cup panko bread crumbs
granulated garlic, sea salt & pepper to taste

Method:
Preheat oven to 450F.
Cut each of the 4 avocado halves into 4 equal segments (you will have 16 in total.)
Dredge each wedge in flour, then egg mixture, followed by bread crumbs mixed with garlic and S&P.  Repeat with remaining avocado.  Spray with cooking spray.
Place coated avocado directly on rack in oven.
Bake for 10-15 minutes.  Until panko is lightly golden in colour

Enjoy warm w/ your favourite dipping sauce.
