Zucchini Bread Oats

I inherited a couple of zucchini's yesterday, courtesy of my parent's garden.  Since I don't have a garden in my backyard, the next best thing is that my parent's do.  All of the benefits and none of the work.  Thanks Mom & Dad! 

Today just so happens to be the first day back to school for the little man, and he couldn't have been more excited.  Me?  I'm fighting back the tears.  L was super excited to meet his new teacher, see his old friends again and of course rock a super cool Batman t-shirt and Lightening McQueen backpack.  He is one styling kid!  So, because today is a special one, of course we have to start the morning off right.  What better way than with a bowl oatmeal that tastes like zucchini bread.  Top it off with some pecans and chocolate chips (for good luck of course), now this is brain food.  With a full stomach and a kiss on the cheek, my little man was off.  Pass the Kleenex.  Why is the first day of school always harder on the parents?


Zucchini Bread Oats


Ingredients:
1/2 cup Quaker quick oats
1/2 cup zucchini, shredded and squeezed dry
1 cup unsweetened almond milk
1 tsp vanilla
1/2 tsp cinnamon
1 Tbsp brown sugar
1 Tbsp chocolate chips
1 Tbsp chopped pecans

additional almond milk for serving

Method:
In saucepan, heat almond milk till it reaches a boil.  Add cinnamon, zucchini and oats.  Reduce heat and cook stirring constantly for 6-8 minutes.  Stir in vanilla and brown sugar.
Remove from heat, pour into bowl.  Top with pecans & chocolate chips.  Add additional milk if desired.  Enjoy.
