Pancake Project Week 6 | Chocolate & Bacon Waffles

Today is a continuation of yesterday's celebrated holiday, 'International Bacon Day!'  Here we go with round 2...are you ready for it?
We ended up with some leftover bacon after last nights fried rice dinner.   Looks like yesterday's supper is today's breakfast.  It also happens to be pancake (or waffle) Sunday.  Combine the two and you have a dangerously delicious morning ahead of you.  Is there anything more perfect than waffle batter, bacon and chocolate?  Diamonds maybe?  But in the food world this has got to be top ranking.  Oh, and what's a waffle without maple syrup?  Good thing I've already completed my workout this morning, because there is no stopping at one.  'This little piggy went back for seconds...'
International Bacon Day has now turned into International Bacon Weekend.   How did that happen?  I blame my husband, he's a bad influence.



NOTE:
These are my absolute, favourite, favourite waffles.  EVER.  In fact if I stopped this blog right now, I would have ended it on the highest note possible.  These are a must try, must eat, must have ASAP.  Point made.  Enjoy!


Chocolate & Bacon Waffles 

Ingredients:
1 1/2 cups all-purpose flour
2 tsp baking powder
2Tbsp sugar
1/4 cup applesauce
1 cup milk
2 large eggs, beaten
1/2 tsp vanilla
1/2 cup chocolate chips
1/4 cup bacon, cooked and crumbled (2-3 strips)

maple syrup for serving
Method:
Preheat waffle maker and spray with non-stick spray.
In large mixing bowl, whisk together flour, baking powder and sugar until blended.  Add chocolate chips and bacon, stir. 
In separate bowl, combine applesauce, eggs, milk and vanilla. Stir wet ingredients into dry, mixing until combined and smooth.  Cook waffles per manufacturers directions.
Top with additional crumbled bacon and chocolate (if you dare).  Serve with maple syrup.
