confetti mug cake | blog birthday #5
it's my blog birthday.
well, at least it was this time last week, but i was in mexico celebrating with cervezas, fish tacos and some of the best people i know.
so now on a random tuesday in may, i'm making a confetti mug cake to properly commemorate the occasion.
if you would have asked me when i started this little blog endeavour of mine, that 5 years later i would have 861 posts under my belt i would have thought you were crazy. but i do and i can't believe it but i do.
my love of being in the kitchen has grown immensely with me over these years and i feel a huge sense of accomplishment. i hope that i continue to grow in experience, maybe one day even tackle and master a croissant, but my biggest hope is that my kids will look back on this one day and see how we ate, shared memories and enjoyed food as a family.
but for now....

confetti mug cake
ingredients:2 tablespoons butter
1/4 cup all-purpose flour
1 egg yolk
2 tablespoons sugar
1 tablespoon unsweetened vanilla almond milk
1 teaspoon vanilla
1/2 teaspoon baking powder
1 1/2 teaspoons sprinkles, plus more for garnish
whipped cream topping for serving
method:
melt butter in large coffee mug for 45 seconds or until melted. add the remaining ingredients except the sprinkles and mix well. stir in sprinkles.
microwave for 60-90 seconds or until cake pulls away from sides and the top is dry. {do not over bake} allow to cool.
top with whipped cream and sprinkles
