chicken-apple sausage rolls w/ red cabbage slaw



BBQ season is, and quite frankly always is in full force.  following an amazing week long vacation in mexico {stay tuned for an influx of a zillion photos} i was anxious and looking forward to getting back in the kitchen and back to sit down family-style dinners with my squad.

on the menu last night....


BBQ'd chicken-apple sausage rolls w/ a red cabbage slaw &
a medley of tomatoes, watermelon & strawberry salad

sausages and slaw just make sense.  throw in a grilled vienna roll and you've basically put everything i love in handheld form.  
#unbeatable

the perfect way to celebrate the weekend, sunshine, and some quality time after being away from the little munchkins for so long.
although truthfully, i'd still like to be in mexico....





Chicken-Apple Sausages w/ Red Cabbage Slaw


ingredients:
6 chicken-apple sausage links {or another sausage type of your choosing}
6 vienna style rolls, split
1 cup shredded red cabbage
1 cup shredded carrots
1 shallot, minced
2 tablespoons, fresh parsley {plus more for garnish}
2 tablespoons mayonnaise
2 tablespoons dijon mustard
1/2 teaspoons apple cider vinegar
1 teaspoon sugar

method:

heat grill to medium-high heat.
in small bowl combine mayonnaise, mustard, vinegar and sugar and whisk till combined.
in large bowl toss together cabbage, carrots, shallots and parsley.  add in dressing and toss to coat.  set aside.
add sausage to grill, turning once until cooked throughout and grill marks are evident.
add rolls to grill and toast till lightly browned.
remove from heat and assemble.

yields: 6 rolls
