peanut butter chocolate chia pudding

afternoons are always challenging for me; it's a constant struggle between my urge to nap, accomplish neglect chores, and fight off the impending hunger pangs to eat dinner at four o'clock.
to summarize i'm an 86 year old.

so until that fateful day when i can convince mr. handsome that the early bird special is the way to go, i suppose i will have to rely heavily on snacking to get me through.
luckily, i'm always prepared with an arsenal of deliciously healthy and satisfying snacks, with yesterday being no exception...
peanut butter chocolate chia pudding.

peanut butter chocolate chia pudding


ingredients:
1/3 cup chia seeds
1 1/2 cups unsweetened vanilla almond milk
3 tablespoons peanut butter
3 tablespoons cocoa powder
2 tablespoons pure maple syrup
splash vanilla
mini chocolate chips

method:
in medium bowl combine chia seeds and almond milk.  store in refrigerator for 30 minutes.   stir and place back in refrigerator for at least four hours, or overnight, covered.
remove from fridge, add in peanut butter, cocoa powder, maple syrup and vanilla, whisking to combine.
divide into two ramekins and top with mini chocolate chips.
