chocolate chip pudding cookies


i have it on good authority that santa likes chocolate chip cookies.

in fact this year he personally requested them.

he also polished off last years chocolate chip cookies.

what can i say?  he's a man after my own heart.

so for the jolly man in red, the bringer of presents and shiny things, 1 batch of chocolate chip pudding cookies & ice cold milk coming up.
or perhaps a nice glass of cabernet sauvignon?

Chocolate Chip Pudding Cookies


ingredients:
1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
3.4 oz package vanilla instant pudding
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi sweet chocolate chips

method:
preheat oven to 350F.  line baking sheet with parchment paper or silicone baking mat and set aside.
using a mixer, beat together butter and sugars until creamy.  add in vanilla pudding mix, eggs and vanilla.  
in a medium bowl, whisk together the flour, baking soda, and salt.  Add the dry ingredients to the wet and mix until just combined.  stir in the chocolate chips.
drop cookie dough by rounded tablespoons onto prepared baking sheet.  bake for 10-12 minutes, or until slightly golden and set.
remove cookies from the oven and let cool on baking sheet for two minutes before transferring to a cooling rack.

yields: 3 dozen
