lemon cool whip cookies.
lemon is my favourite and i'm weak, so even though these are intended as gifts, i forsee a couple getting "lost" along the way.
or is it quality control?
also, i'm thinking of starting a support group for lemon-a-holics. any takers?
ingredients:
1 package lemon supreme cake mix
8 oz container cool whip topping, thawed
2 eggs
1/2 cup confectioners' sugar
method:
preheat oven to 350F. line baking sheet with parchment paper or a silpat mat and set aside.
beat together whipped topping and eggs. add in cake mix and continue to mix
drop by teaspoonfuls into powdered sugar, rolling to coat. place cookies on prepared sheets and bake for approximately 8-10 minutes. allow to cool for 2 minutes before transferring to cooling rack.
