white chocolate & peppermint rice krispie treats


candy canes reign supreme this time of year.  

whether you choose to decorate your trees with them, or fill your bellies with them, it's safe to say you'll be in red and white striped heaven.


this year our teacher christmas gifts are peppermint inspired, with a little rustic homemade ornament on the side.  i love christmas.


everyone knows that peppermint pairs best with chocolate, and white chocolate at that.  this killer flavour combination is going to take the beloved rice krispie treat to new heights.

who needs the red and green rice krispies when you can make it taste like the holidays instead.



white chocolate & peppermint rice krispie treats


ingredients:
6 cups rice krispie cereal
1 (250g) pkg marshmallows
3 tablespoons unsalted butter
1/4 teaspoon peppermint extract

1 pkg white chocolate chips
4 candy canes

method:
generously spray a 9 x 13 baking pan with nonstick spray.  set aside.
place unwrapped candy canes in a ziplock bag and smash until crushed.  set aside.
in large saucepan over low heat, melt butter.  add marshmallows and stir till melted and well blended.  remove from heat stir in peppermint extract.
add rice krispie cereal and stir to evenly combine.
using a spatula sprayed with non stick cooking spray, press into prepared pan.  cool.  cut into bars.

place white chocolate chips in a small bowl.  heat in microwave in 30 second intervals, stirring in between, until melted and smooth.
dip tops of bars into melted chocolate and sprinkle each with crushed candy canes.
let sit until chocolate is set, or place in fridge to speed up the process.
