cranberry pumpkin seed crisps w/ roasted butternut squash & spicy pumpkin seeds
the holidays are officially upon us, and so to is holiday entertaining.
luckily with kii naturals artisanal crisps as a pantry staple you now have an easy, go-to, crowd pleasing crisp that is extremely versatile. alone or dressed up, these crisps are party perfect, which means party hopping can officially start and should.
cranberry pumpkin seed crisps w/ roasted butternut squash & spicy pumpkin seeds
ingredients:
1 box (5.3oz/150g) kiwi naturals cranberry pumpkin seed crisps
4 cups (1 1/4lb) cubed butternut squash
2 tablespoons olive oil
1 tablespoon chopped fresh thyme
4 cloves garlic, peeled
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons plain greek yogurt
1/3 cup goat cheese, crumbled
spiced pumpkin seeds
1/4 cup pumpkin seeds
1/2 teaspoon vegetable oil
1/2 teaspoon brown sugar
pinch of each:
salt, pepper, cumin, paprika, cayenne
method:
preheat oven to 400F. line a baking sheet with parchment paper; set aside. toss butternut squash with olive oil, thyme, garlic, salt, chili powder, and pepper. roast for 40-45 minutes on baking sheet until tender.
add squash to food processor with yogurt and pulse until smooth.
spiced pumpkin seeds: meanwhile, preheat oven to 300F. toss pumpkin seeds with oil, sugar, salt, pepper, cumin, paprika and cayenne. spread on a baking sheet lined with parchment paper. bake for 25 to 30 minutes or until dry and toasted. cool completely.
top each crisp with a dollop of butternut squash, crumbled toast cheese and 1 teaspoon of pumpkin seeds.
