beet & goat cheese crostini
my fantasy football team couldn't be much worse.
seriously.
at this point i'm fighting for last place and the consolation/ loser bracket has my full and undivided attention.

ugh. losing is the worst.
since football isn't going in my favour, my direction has now shifted and is diverted to snacks and wine.
specifically, beet & goat cheese crostinis paired with a glass of pinot grigo.

beet & goat cheese crostini
ingredients:
1 baguette, sliced
3 medium beets, cooked, cooled & diced
1 small shallot, diced
4 oz goat cheese, softened & crumbled
1 tablespoon olive oil, plus more for baguette
1/2 tablespoon balsamic vinegar
1 tsp sugar
salt and pepper to taste
1/2 cup walnuts, chopped
basil ribbons for garnish
method:
drizzle olive oil over baguette slices and toast in oven till golden brown. flip and toast on the other side.
in small bowl combine diced beets, shallot, olive oil, balsamic, sugar and salt & pepper to taste.
top each crostini with beet mixture, goat cheese, walnuts and basil ribbons.
