roasted green tomato salsa
you have friends, and then sometimes (if you're really lucky) you have friends that give you fresh tomatoes from the garden.
those kind of friends are my favourite.
thanks M & M for the saturday's post-wedding nachos, and of course sending me home with a lovely tomato care package. you are good people.
mr. handsome is especially grateful since he is the proud owner of a fresh batch of salsa that'll get him through the next week next day or two.
roasted green tomato salsa
ingredients:
6-7 small - medium green tomatoes
2 large jalapeno peppers, halved, w/ ribs and seeds removed
3 cloves of garlic
1 red onion, cut into large chunks
2/3 cup fresh cilantro
1/4 cup fresh lime juice
sea salt & pepper to taste
green tabasco sauce to taste
method:
set oven to broil
on a baking sheet spread out tomatoes, jalapeño peppers and onion and place in oven until charred. the onions and peppers will char faster so remove them first and then place the tomatoes in the oven to finish. add garlic during the last minute (so as not to burn)
place everything in a food processor and whirl until blended. add in salt and pepper to taste and tabasco sauce if using. whirl again.
place in air-tight container and store in fridge to cool.
