Make-Ahead Gravy

as host to this years thanksgiving dinner, i needed to be on my a-game. a-game means prepping as much before hand as humanly possible.
this is the type-A personality in me coming out.
don't fault me.

as we do every year we began our sunday with the Alhemimzers Race in eau clair.  
running = eating more food = more gravy.

my math skills never fail.

also not a fail, my make-ahead gravy base.  prepped on saturday, add turkey drippings on sunday.  and done.



 make-ahead gravy

ingredients:
1/2 cup butter, unsalted
1 large red onion, halved sliced thick
4 large garlic cloves, peeled and halved
4-5 cups no-salt added chicken stock
1/2 cup all-purpose flour
fresh sage
fresh thyme
sea salt and pepper to taste

method:
in medium saucepan, melt butter and add onion and garlic.  saute for 10-15 minutes.  sprinkle in flour and cook stirring constantly for 1 minute.  add in chicken stock, sage, thyme and salt and pepper.
lower heat and simmer for 20 minutes.
remove from heat and allow to cool before transferring to the fridge.

when ready to use.  add gravy base to pan with turkey drippings and heat through.  adjust seasonings. strain. enjoy.
