Smarties Cookies | Truvia Brown Sugar Blend

recently the good people at Truvia sent me their new Brown Sugar Blend to try out.
new product, doorstep delivery, and an excuse to bake, what more could a girl ask for?
as a follower of the everything in moderation lifestyle (with wine and avocado being an exception) i really don't eliminate anything from our household.  so when it comes to baking; white sugar, brown sugar and confectioners' sugar are always pantry staples.
but, who can dispute the facts on this new Brown Sugar Blend.  most people i know are looking for ways to cut calories while not sacrificing taste. 
and one-half cup of Truvia Brown Sugar Blend (210 calories) replaces 1 cup of regular brown sugar (830 calories) while still providing the brown sugar like taste, texture and moistness that we've all come to love and appreciate.
the self proclaimed cookie monster in me {and my kids} decided that yesterday was the perfect afternoon to bake cookies and product test.  add in a canadian staple, Smarties, and you've basically made my day.
 result:  these cookies were great.  soft, delicious, chalk full of smarties and gone in the blink of an eye, thanks to a cookie thief in our family....
guess it means she liked them.


Smarties Cookies

ingredients:
1/2 cup butter, melted
3/4 cup Truvia Brown Sugar Blend
1/2 teaspoon vanilla extract
1 egg
1 tablespoon water
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup all-purpose flour
1 cup Smarties


method:
preheat oven to 375F.
melt butter in microwave and add to large mixing bowl with the Truvia Brown Sugar Blend.
add in vanilla, egg and water.  mix for 1-2 minutes to start dissolving the sugar.
whisk salt and baking soda into the flour in a separate bowl.  add to the liquid ingredients and mix to form a very soft dough that's like thick batter.  This thin consistency will allow the cookies to spread in the oven and develop a soft and chewy texture.
mix in smarties.
drop dough by rounded tablespoon on cookie sheet and press down lightly.  bake for 6-7 minutes until the edges are lightly brown.
cool on pan for 1-2 minutes until cookies set, then transfer to cooling rack.
