well that's it, summer vacation has officially come to an end.
the new school year has started, backpacks have been purchased and our bus routes determined.
and just like that the days are once again my own.
don't get me wrong summer was great. we took a family road trip, played golf, moved into our dream home, and i watched my beautiful sister marry her best friend. but as much fun as it all was, everyone was ready for school, especially the kids.
a new school year and a new beginning, means a new pancake recipe.
summer = s'mores
school = pancakes
so first day of school = s'more pancakes
(side note i really should be a math teacher)
2 cups bisquick mix
1/3 cup graham cracker crumbs
2 tablespoons sugar
1 1/3 cup unsweetened vanilla almond milk
1 egg, lightly beaten
1/2 teaspoon vanilla
1/2 cup milk chocolate chips
graham cracker crumbs
in large bowl combine bisquick mix, graham cracker crumbs, and sugar.
in separate bowl add egg, milk, and vanilla and whisk together. add to bisquick mix stirring to incorporate. fold in chocolate chips.
heat griddle and grease. pour batter by 1/4 cupfuls onto hot griddle.
cook until bubbles form on the surface. turn, cook till golden.
top each pancake with marshmallow fluff, sprinkle with graham cracker crumbs and chocolate chips.
yields 10-12 pancakes.
