Grilled Sweet Potato & Scallion Salad

it's customary on labour day to BBQ with family and spent some quality time with friends, and happily yesterday both were achieved.
we even managed to lay sod in the front yard after a solid 2 days of rain prevented it from happening sooner.

grilled sweet potato & scallion salad


ingredients:
5 small sweet potatoes
8 scallions
1/2 cup olive oil, divided
1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon dijon mustard
1/4 cup roughly chopped fresh parsely
sea salt & pepper

method:
cook potatoes in microwave until they can be pierced easily with a fork.
cut each potato in half lengthwise and then half again.
preheat outdoor grill to high.  brush with 1/4 cup of olive oil and arrange on the grill.  grill until just tender, about 3 minutes per side.  grill scallions until softened and charred, approximately 1-2 minutes.  remove both from the grill and cut the scallions into smaller pieces.
in a large bowl, whisk 1/4 cup olive oil, mustard, vinegar, and honey; season to taste with sea salt and pepper.  add the potatoes, scallions and parsley and toss until everything is well coated.
