single parent weekend continues...
while mr handsome takes in fresh mountain air, stunning scenic views, and enjoys his much deserved golf weekend away with the boys, the kids and i are missing him terribly having pancakes.
single parenting isn't so bad, when served with a side of pancakes.
so far we've made the most of the weekend.

and that was just saturday.
today is a new day, sunday. let it be sunday.
following an early morning 6 km walk where we soaked in one of the last remaining late summer sunrises the kids and i came home and indulged in some creamy, lemony, oh-so-delicious, pancakes.

the only thing that could possibly make this day any better is my late lunch date with the lovely JA and MD, NFL season, and of course the return of mr handsome (with presents in hand i'm sure)

Lemon Ricotta Pancakes
ingredients:1 3/4 cups (15 ounces) part-skim ricotta cheese
1/3 cup granulated sugar
2 eggs
2 tsp lemon zest
2/3 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp vanilla
confectioners' sugar, lemon juice & fresh berries for serving
method:
in small bowl, whisk flour, baking soda and baking powder.
in medium bowl, whisk together ricotta cheese, sugar, eggs, lemon zest, and vanilla. add flour mixture until just combined.
heat large nonstick skillet over medium-low heat. add pancake batter using a 1/4 cupfuls. cook until browned, approximately 4-5 minutes per side.
serve hot with confectioners' sugar, a squeeze of lemon juice & fresh berries
yields: 8 pancakes
