Lemon & Chia Seed Muffins


my initial plan this afternoon was a lovely long walk to the playground with the kids.

instead the weather decided to be rainy, cold & dreary.

plan b, make muffins. 
enjoy with tea & moccasins.



lemon & chia seed muffins


ingredients:
1 3/4 cups all-purpose flour
1 tablespoon baking powder
3/4 cup sugar, plus more for sprinkling
2 eggs lightly beaten
1/2 cup unsweetened vanilla almond milk
1/4 cup vanilla greek yogurt
1/4 cup ricotta cheese
1/4 cup oil
zest & juice of 2 lemons
2 tablespoons chia seeds
1/2 tsp vanilla


method:
preheat oven to 400F.  spray 12 cup muffin tin with non-stick spray and set aside.
in medium bowl combine eggs, yogurt, ricotta, milk, oil, lemon juice and vanilla.  whisk to combine.
in large bowl combine flour, baking powder, sugar, salt, lemon zest, and chia seeds.  add milk mixture and mix until just incorporated.  
using an ice cream scoop divide the batter into the prepared muffin tin and sprinkle with sugar.
bake for approximately 18 minutes or until toothpick inserted comes out clean.  

yields 12 muffins
