monster rice krispie treats

 we are officially one day away from possessing too much chocolate & candy, not enough will power, and the knowledge & foresight that these two things are bound to last until the new year.

that being said i'm still going ahead with a more than appropriate halloween treat to share with friends.
monster rice krispie treats.
you're welcome.  trick-or-treat.  xo.

monster rice krispie treats

1/4 cup butter
5 cups of miniature or 40 large marshmallows
1/2 teaspoon vanilla extract
6 cups rice krispies cereal

candy melts in assorted colours
candied eyes

in large saucepan over low heat, melt margarine.  add marshmallows; stir until melted and well blended.  remove from heat.
stir in vanilla.  add cereal, stirring until coated.
using lightly butter spatula, press into buttered 13 x 9-inch pan.  cool.  cut into bars.
melt vanilla candy melts in microwave according to package directions.  
dip each cut bar into melted candy melts and top with eyes.  allow to reharden before enjoying.

Kale & Brussels Sprout Slaw | Best of Bridge Home Cooking

somedays you workout out and eat salads,  others you wear sweatpants and eat candy while watching too many episodes of Ballers.  it's a balancing act.

however, with a strong appreciation and love for kale, it's easy to get back on track and off the candy train when you get to indulge in a kale and brussels sprout salad that has cheese and nuts and sweet apples co-mingling together on a plate. 
this salad comes to you courtesy of the Best of Bridge Home Cooking cookbook that was recently delivered to me.  yes, the same cookbook that produced yesterdays apple blondies with brown sugar frosting, produced this salad.  it's all about balance.  and it would seem maybe apples too?  i'm on the apple bandwagon.

Kale & Brussels Sprout Slaw

1/4 cup olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons cider vinegar
1 tablespoon grainy or dijon mustard
1 tablespoon liquid honey

5 cups loosely packed kale
8 large brussels sprouts, ends trimmed
1 small apple, diced
1/3 cup crumbled feta cheese
1/3 cup chopped pecans, toasted (see tip, below)

dressing |   in a small bowl or jar, whisk or shake together oil, lemon juice, vinegar, mustard and honey
salad |   pull the kale leaves off the stalks and discard the stalks.  stack and thinly slice the leaves.  halve the brussels sprouts lengthwise and thinly slice.  in a large bowl, combine kale, brussels sprouts, apple and feta.  drizzle with dressing and toss to combine.  serve sprinkled with pecans.

serves 6

tip:  toast pecans in a small dry skillet over medium heat, shaking the pan often, until pale golden and fragrant.  let cool before adding to your salad.

Apple Blondies w/ Brown Sugar Frosting | Best of Bridge Home Cooking

i absolutely love this time of year.  
the air is crisp, perfect for cuddling. 
leaves have tuned a beautiful array of colours and the ones that have fallen are crunchy and perfect for stomping on.
it also happens to be the perfect season to eat your weight in apples.
roadside stands and farmers markets are bursting with ample apple varieties, and when you have apples you should probably absolutely bake something.
thankfully, i just received my copy of the Best of Bridge Home Cooking in the mail and immediately my eye was drawn to the apple blondies w/ brown sugar frosting.

if you're canadian, chances are you grew up with your mom and grandma baking from these cookbooks.  Best of Bridge recipes are beloved staples at family dinners and a mainstay in canadian kitchens.  
celebrating 40 years now, Best of Bridge is back with a collection of recipes that evoke all the goodness of home cooking.
food that makes you feel good and tastes great.  with 250 recipes, there are dishes for every occasion and meal.  soup for lunch, one-pot dinners and did i mention apple blondies.
i'm a firm believer if you throw fruit into any cake, cookie, pie or bar, you're automatically eating healthy.  right?  okay, well maybe let's just pretend this to be true.

Apple Blondies w/ Brown Sugar Frosting

2/3 cup butter, softened
2 cups packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped apples
3/4 cup chopped walnuts

brown sugar frosting
1/2 cup butter
1 cup packed brown sugar
1/4 cup milk or cream
2 cups confectioners' sugar, sifted

blondie |   preheat oven to 350F.  grease a 13x9-inch baking pan.
in a large bowl, using an electric mixer on medium speed, beat butter, brown sugar, eggs and vanilla until think and smooth, about 3 minutes.  combine flour, baking powder and salt.  add to butter mixture on low speed, mixing until blended.  stir in apples and nuts, mixing well.
spread evenly in prepared pan.  bake until set and golden, 25 to 30 minutes.  let cool completely in pan on a wire rack.

brown sugar frosting |  in a small sauce pan over low heat, melt butter.  stir in brown sugar and milk.  bring mixture just to a boil then remove from heat and let cool to lukewarm.  stir in confectioners' sugar, mixing until smooth.
spread evenly over bar.  let stand until frosting is firm enough to cut.  
cut into bars or squares.

makes 20 to 54 bars or squares.

tip:  this frosting is very soft when first mixed, which makes it very nice to spread.  it firms up upon cooling
tip:  choose apples that are crisp, tart and not too  moist.  granny smith, golden delicious and spartans are good choices.

Waterton Weekend

this past weekend, mr. handsome and i left the kids with the grandparents and took off to waterton with a boatload of friends to watch two more really good friends get hitched.  
congrats C & S.  xo.
despite living a mere 3 hours from waterton, i've actually never been before and it's a shame because clearly i've missed out on some amazing hiking trails, beautiful scenery and food.
not too worry though, it's officially on the radar for next summer, when it's open again for the season.
in the meantime, here is a quick glance at mother nature's finest, oh and some hot dogs.  cheers.xo
