Naan Pizza w/ Roasted Vegetables & Goat Cheese


I usually fly solo in the kitchen.  However, today I was lucky enough to have a friend join me in my culinary adventure.  KPM.  The two of us have a few things in common; we both studied German (I have at least 3 solid phrases), we are somewhat vertically challenged, we are bloggers, oh, and we have a shared love for great TV programming.  Two of our favourites?  The New Girl & The Good Wife. 
KPM currently resides in NYC (a place I long to visit, let alone live.  Lets just say she is living my dream) and is back home for the holidays.  As a good catch up, we decided to get together, do some cooking and watch a little TV.  Our food was inspired of course by TGW, and last weeks episode which featured jury food.  Take-out, to be specific.  So playing off that, we are having pizza.  Does it get any better?   Wanting to keep it simple and fuss free, I subbed out homemade pizza dough for naan bread.  Although to be honest, this isn't really a compromise.  Naan bread is def. one of my favourite carbs.   Throw in roasted vegetables and goat cheese and you've stumbled upon the perfect lunch.  But let's be honest, when is pizza or 'naanza' not perfect.   Multiplied with good company and you've got a recipe for a perfect Tuesday!


Naan Pizza w/ Roasted Vegetables & Goat Cheese


Ingredients:
2 pieces naan bread
1/4 cup pizza sauce (or roasted red pepper sauce)
1 sweet pointed pepper, sliced
1/4 onion, sliced
1/2 cup spinach
3 Tbsp sun-dried tomato, packed in oil & drained
1/4 cup crumbled goat cheese
1 basil leave, julienned
1 Tbsp olive oil

Method:
Preheat oven to 400F.  Line baking sheet with foil.
In small bowl combine peppers and onion and toss with olive oil.  Transfer to baking sheet.  Bake for 20 minutes, turning once halfway.  Remove from oven.
Increase temperature to 425F
To make pizza: spread sauce equally over both pieces of naan, top with roasted vegetables, sun-dried tomatoes, spinach and goat cheese.  Bake for 8-10 minutes.
Top with fresh basil.

This pizza was simply divine, made only better by the company and 'What Went Wrong' playing in the background. Thank you for such a lovely afternoon... and the inspiration to add goat cheese to my next homemade pizza!
