Peanut Butter & Chocolate Chip Banana Baked Oatmeal
for Christmas this year mr. handsome and i bought the kids an 8 week ski lesson package at mount norquay.
not only does this mean the kids will learn a crucial canadian sport, but i get to go to my beloved mountains every Sunday and channel my inner ski bunny while i lodge fireside with a plate of fries and hot cocoa.

with an early start to our Sunday i decided to go ahead and make a big batch of baked oatmeal that is sure to keep our insides warm and bellies happy.
also, it has peanut butter & chocolate.

Peanut Butter & Chocolate Chip Banana Baked Oatmeal
ingredients:2 1/2 cups old fashioned oats
1/4 cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 cups unsweetened vanilla almond milk
1 large egg
1/2 cup peanut butter
1 tsp vanilla
3 bananas, divided (half mashed, half sliced)
3 tablespoons mini chocolate chips
method:
preheat oven to 375F. spray an 8-inch square baking dish with non-stick spray.
combine oats, sugar, baking powder, cinnamon, and salt in a bowl.
in a separate bowl, whisk milk, egg, peanut butter, mashed banana, and vanilla.
line bottom of pan with sliced bananas. cover with oat mixture. slowly drizzle milk mixture over the oats. gently tap dish on work surface to distribute liquid. scatter chocolate chip across the top.
bake for 40-45 minutes, until top is nicely golden and oat mixture has set. allow to cool slightly.
