mediterranean linguine w/ prawns
remember last week when mr. handsome took over the kitchen and made that amazing butternut squash & pesto lasagna while i napped?
well it happened again.
except instead of napping i read a trashy magazine and sipped on a glass of shiraz.

one of my husbands favourite restaurant meals is the mediterranean linguine w/ prawns from earls. truthfully, he had it last night when we went out to dinner.
apparently though, he didn't get his fix, so tonight he recreated it in our very own kitchen.

mediterranean linguine w/ prawns
ingredients:
1/2 cup white wine
2 cups cherry tomatoes
1/4 cup extra virgin olive oil
5 cloves garlic, minced
1 cup kalamata olives, pitted
1/2 cup tomato sauce
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped, more for garnish
1 tablespoon balsamic vinegar
1 cup feta cheese crumbled
20 prawns, cooked & deveined
sea salt & pepper to taste
750g linguine pasta
method:
heat oil in large saucepan over medium heat. add tomatoes, olives, wine, and garlic, cook until tomatoes blister and sauce begins to thicken.
meanwhile in salted water, cook pasta till al dente.
drain pasta and add to skillet with balsamic vinegar, tomato sauce, prawns, basil and parsley. tossing to coat and heating thru. season to taste with salt and pepper
remove from heat. sprinkle with feta cheese and garnish with additional parsley.
serve.
yields: 4 serving
