Julia Child's Garlic Mashed Potatoes
there is a reason why some of my favourite cooking quotes come from Julia Child.
plain and simple.
she's fierce, she's legendary, and she's someone i would have loved to cook & eat alongside.
after all, 'people that like to eat, are the best people.'

it's safe to say because of the above, i trust her immensely when it comes to anything food related.
butter is always a good idea.
cream is always a good idea.
and 30 cloves of garlic in anything is bound to make me smile.

Julia Child's Garlic Mashed Potatoes
ingredients:30 cloves garlic, unpeeled
8 tablespoons unsalted butter
2 tablespoons flour
1 cup whole milk
2 1/2 lb. russet potatoes, peeled and cut into 1 inch pieces
kosher salt & freshly ground white pepper to taste
1/4 cup heavy whipping cream
1/4 cup minced parsley
method:
boil garlic in a 1-qt. saucepan of water 2 minutes; drain and peel. melt 4 tablespoons butter in a 4-qt. saucepan over medium. cook garlic until soft, 15-20 minutes. stir in flour; cook 2 minutes. stir in milk; cook until thickened, 3-4 minutes. transfer to a blender; puree into a smooth sauce. cook potatoes in salted boiling water until tender, about 15 minutes; drain and pass through a potato ricer back into the pan. stir in remain butter, reserved sauce, the cream, parsely, salt, and pepper, cook 2 minutes more.
serves 6.
