Pie ala Saskatoon

After a super successful Saturday morning picking berries with the family, we returned home with more than anticipated.
What's a girl to do?  Make pie of course.  You can never have too much pie.

So with aprons on, we all set out to make homemade dough (a secret family recipe, which I will not be divulging) filling, and bake this beauty.

Oh what a Saturday.  Who knows what Sunday will bring?

In the meantime, Saturday will bring delicious pie.  That's what every Saturday should bring.

Saskatoon Berry Pie

Ingredients:
2 disks of pie dough (homemade or store bought)
4 cups Saskatoon berries
2/3 cups sugar
2 Tbsp flour
pinch of min it tapioca
1-2 tsp lemon zest (optional)
2 Tbsp unsalted butter, quartered

milk & sugar for glaze

Method:
Preheat oven to 425F.
In medium bowl toss Saskatoon's, sugar, flour, tapioca, until coated evenly.
Place bottom crust in pie plate.
Add berries.
Top with butter and lemon zest.
Roll over with 2nd pie crust.  Crimp edges.  Brush with milk-sugar mixture and vent.
Bake for 15 minutes.  Lower heat to 350F and continue to bake for 50-55 minutes.
When edges begin to brown, cover with tinfoil.
Remove from oven and let cool.

Serve w/ ice cream if desired.  (if desired??)
