watermelon, blueberry, feta & mint salad


this weekend was my birthday weekend.  i'm officially 35 which means i've graduated to the new age bracket of 35-49.  yikes, how did that happen?
to celebrate my sister and her husband (who was also celebrating a birthday weekend) hosted a family BBQ, our first one of the summer season.  
my contribution was a refreshing watermelon salad.  
so colourful and bright, it's looks like summer in a bowl.  



watermelon, blueberry, feta & mint salad

ingredients:
7 cups, seedless watermelon, diced
2 cups blueberries
2/3 cup feta cheese, crumbled
1/4 cup mint

dressing:
3 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
1 teaspoon maple syrup
salt & pepper to taste


method:
in small bowl whisk together olive oil, balsamic vinegar, syrup, salt and pepper set aside.
in large bowl combine watermelon, blueberries and toss together with dressing.  fold in cheese and mint.  serve.
