baked granola cups

we love a good parfait in our house.  
but really, can you fault us?
this morning i wanted to try something new and different, so instead of crumbling the granola on top, i made it into a cup and it became the star and vessel for the yogurt and berries that followed.
granola success!  
also, our new snacks for the rest of the week. 
tuesdays aren't so bad.

baked granola cups

ingredients:
1 1/2 cups oats
1/2 cup walnuts, chopped
1/2 cup sliced almonds, chopped
3 tablespoons honey
2 tablespoons maple syrup
1 tablespoon olive oil
1/2 teaspoon vanilla

vanilla greek yogurt & fresh berries for serving.

method:
preheat oven to 350F.  spray 12 cup muffin tin with non stick spray.  set aside.
in large bowl mix together honey, syrup, olive oil and vanilla until well combined.  add in oats and nuts and mix until combined.
divide mixture into prepared muffin tin, making a well/indent in the middle, pushing the mixture up the sides.  bake for 15 minutes. remove from oven and allow to cool for at least 30 minutes before removing from pan to avoid crumbling.
fill with yogurt and top with berries.  enjoy!
