Lemon-Basil-Parmesan Spaghetti

and of course food.



in fact 'pinterest jen' is far cooler, has a much better wardrobe, can modpodge anything, is so organized that it puts martha to shame, and shiplap, don't even get me started.   unfortunately 'pinterest jen' only exists online, but i'll get over it.

last week while i was busy pinning away ideas for back-to-school and tips on actually organizing myself to a respectable state, i came across a recipe for lemon spaghetti.  obviously i stopped what i was doing (procrastinating if you will) and decided to look into this dinner further.

a simple ingredient list meant it was something that was perfect for a quick weekday dinner, in between school bus pickups and early evening family walks.
best part though, it's delicious, the perfect pasta dish to bid adieu to summer and welcome in the crisp air and crunchy leaves that will soon follow.

lemon-parmesan-basil spaghetti

ingredients:
1 lb spaghetti
2/3 cup olive oil
2/3 cup grated parmesan
1/3 cup fresh lemon juice
salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves

method:

cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes.  meanwhile, whisk the oil, parmesan, and lemon juice in a large bowl to blend.
drain the pasta, reserving 1 cup of the cooking liquid.  toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten.  season with salt and pepper.
garnish with lemon zest and chopped basil.
