pineapple-coconut-banana bread


it's the middle of winter in canada so it's only fitting that when you bake, you bake with ingredients that remind you of the tropics, summer and everything beachy.  
this is especially important since currently outside my kitchen window, my scenery consists of skating rinks and toboggan hills.

in an attempt to warm-up today i made a fresh baked loaf of pineapple-coconut-banana bread for mr. handsome & my littles.

pineapple-coconut-banana muffins

ingredients:
1/2 cup butter, room temperature
1 cup sugar
2 large eggs
1 large ripe banana, mashed
1/3 cup crushed pineapple, drained
1/2 cup sweetened flaked coconut
1/2 teaspoon vanilla extract
1/4 teaspoon coconut extract (optional)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

method:

preheat oven to 350F.  grease 9x5-inch baking pan.  set aside.
in the bowl of an electric mixer, cream together butter and sugar until fluffy.  add in eggs one at a time.  add in banana, pineapple, coconut, and both extracts, mix well.
in large separate bowl, whisk together flour, baking powder, baking soda, and salt.
add dry mixture to wet ingredients and bring together until just combined.  do not over-mix.
bake for 50-60 minutes or until toothpick inserted comes out clean.  do not over bake.
cool in pan for 10 minutes before turning out and cooling on wire rack.
