chocolate chip banana-bran muffins
i've said it before that one persons bowl of cereal, is another persons breakfast muffin....
that person is me. although to be honest, i'd like to chase the muffin with a big bowl of cereal and ice cold almond milk too.

i'm pretty certain that every bowl of all-bran cereal aspires to become a muffin. especially when the muffin is chocolate chip banana bran.
chocolate chip banana-bran muffins
ingredients:2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, ripe & mashed
1 1/2 cups all-bran cereal
1/4 cup unsweetened vanilla almond milk
1/4 cup butter melted, cooled
2/3 cup sugar
2 large eggs
1 teaspoon vanilla
3/4 cup mini chocolate chips, plus more for top if desired
method:
preheat oven to 350F. spray 12 cup muffin tin with non stick spray and set aside.
in large bowl, combine cereal, mashed banana, milk and butter, and allow to sit until cereal softens, approximately 5 minutes.
meanwhile, in separate bowl, whisk together, flour, baking powder, baking soda and salt. set aside.
add sugar, eggs, and vanilla to softened cereal and using an electric mixer blend.
add in flour mixture and stir together until batter just comes together, do not over mix. fold in chocolate chips.
divide batter among prepared muffin pan and sprinkle with a few more chocolate chips if desired.
bake for 20-22 minutes or until toothpick inserted comes out clean.
allow to cool in pan for 10 minutes before turning out onto baking rack.
