overnight eggs benedict casserole


good morning 2015.

obviously we are going to celebrate your arrival with a lovely brunch.
mimosas, fresh fruit, & egg benedict casserole are all on the menu this morning and the perfect way to wake up with loved ones.


this delightful & heavenly casserole is made even better since it soaks overnight and works it's magic while you are out enjoying NYE festivities with friends.

Overnight Eggs Benedict Casserole


ingredients:
8 large eggs
2 cups milk
3/4 lb Canadian bacon, diced 1/2-inch thick
6 English muffins, split & cut into 1-inch dice
3 green onions, sliced thin
1/4 teaspoon paprika
parsley for garnish
pepper to taste

hollandaise sauce for serving


method:
spray 9x13-inch baking dish with non-stick spray.
in large bowl, whisk eggs, milk, onions, and pepper.  set aside.
layer half of the diced bacon on the bottom of prepared dish;  top with english muffins and remaining bacon.  pour egg mixture over top.  refrigerate, covered, overnight.

preheat oven to 375F.  removing casserole from refrigerator while oven heats.  sprinkle top with paprika.  bake, covered, 35 minutes.  uncover; bake 10-15 minutes longer or until a knife inserted near the centre comes out clean.

serve with hollandaise sauce.
