Single Serving Protein Pancake

what i don't love, is that approximately 3 minutes and 17 seconds after eating my last bite i'm hungry again.

i blame the insignificant/zero protein component found in most recipes.  i'm the type of girl that relys heavily on protein in my morning routine.   from coffee dates with my best girl, to packing lunches, bus stop drop offs, and a date with the gym, i'm busy and hungry.
hence the need for a protein-packed pancake.  
eggs, egg whites and even Greek yogurt, are the body to this oatmeal based pancake.  topped off with sweet banana and crunchy walnuts, this keeps me going far longer than any store bought pancake mix could.

satisfying, healthy, & heavenly



single serving oatmeal & Greek yogurt protein pancake

ingredients:
1/4 cup vanilla Greek yogurt
1/2 cup quick oats
1 egg
1 egg white
splash of vanilla

sliced bananas & chopped walnuts for serving
(optional) drizzle agave or maple syrup


method:
preheat non-stick skillet over medium low heat.  Spray with cooking spray.
combine all ingredients in small bowl.
pour batter into pan and cook for 3-4 minutes.  carefully flip and cook on remaining side for another 2 minutes or until cooked through.
top with banana slices & walnuts.
drizzle with agave or maple syrup (optional)
