Strawberries 'n Cream Pancake Skewers

february 14 = valentines day = pancakes for breakfast + chocolate hearts + a small gesture of love

actually come to think of it, all holidays have my name written all over them.  #justsaying

like with all special occasions in our house, today started with pancakes. 

 lots and lots of pancakes.

 don't worry.
they're mini.
they don't count.

let the pancake shovelling commence.

Strawberries 'n Cream Pancake Skewers

Ingredients:
favourite pancake recipe (or store bought mix - no judgement)
strawberries, sliced
whipped cream

wooden skewers


Method:
preheat non-stick skillet over medium heat.  
prepare batter and drop by tablespoons onto griddle and cook until bubbles form on the top.  flip and cook till golden on the opposite side.
to assemble:  stack four pancakes, top with sliced strawberries, whipped cream, and secure with wooden skewer.
