Fresh Strawberry Butter

hello morning.


first and foremost you should know i will never ever give up bread and butter.  secondly, because of my affection towards these two, i also thank the gluten gods daily that i don't have an allergy preventing me from indulging in this delicious duo.


this morning i decided to take my english muffin & butter combo up a notch by incorporating sweet fresh strawberries.  is it just me or are strawberries looking extra delicious right now?


i can assure you this was a good idea.
and in doing so, i've also set us up for leftovers to accompany this weekends pancake and waffle extravaganza. #happybrunching




Strawberry Butter


Ingredients:
1 cup unsalted buttered, softened
2/3 cup fresh strawberries, hulled and chopped
1/4 cup confectioners' sugar

Method:
In bowl of electric mixer combine butter and sugar until smooth.  Add in strawberries and mix further until combined.

enjoy on toast, scones, waffles, pancakes, etc.
store covered in fridge.
