Basic Hummus


Last Wednesday J and I partook in a mid-week date night, my favourite kind if you must know.  Nothing breaks up a work week better than sending the kids off to the grandparents and enjoying some adult conversation and a relaxed dinner.  
We went to our favourite restaurant, Famoso.  No surprise there, we frequent it weekly, usually in the form of take out, or a Sunday family lunch, but on Wednesday we got to experience it in true date form.  We even ordered appetizers and dessert.  Score!  We opted for the Mediterranean flatbread w/ hummus and tzatziki, and ever since then, J and I have been on a 'we need hummus again' fix. 


And what better time than a Saturday afternoon to make this happen.

Basic Hummus

Ingredients:
2 cups chickpeas, drained
2-3 cloves garlic, grated
1/3 cup tahini
juice from 2 lemons
2 Tbsp olive oil, plus more for drizzling
1 1/4 tsp kosher salt
paprika

pita or naan bread & vegetables for serving

Method:
Combine all ingredients except paprika in food processor, whirl till smooth.  Transfer dip to serving bowl and sprinkle with paprika and drizzle with extra olive oil.
Serve with pita bread and vegetables.  
Optional - drizzle pita or naan with olive oil and warm in oven before serving with hummus (delicious option!!)
