Blackberry & Granola Pancakes.
This recipe combines my two favourite breakfast foods and is then dredged in maple syrup. Does it get any better? Nope.
You can find a version of this pancake on the menu at Hash House a Go-Go in Vegas. If you've never been, let me give you the run down. The pancakes at this restaurant are basically the size of a car tire. Seriously, they're huge! I've died and gone to heaven. Carb and maple syrup heaven.
This is my take on it (obviously scaled down to an appropriate pancake size). Fresh blackberries and my own homemade berry granola, cap off this basic pancake recipe. Scrumptious. The different textures and flavours make for some epic flapjacks, totally blog worthy.

Blackberry & Granola Pancakes
Ingredients:
1 1/4 cup all-purpose flour
3 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
2 large eggs, lightly beaten
1 cup milk
1/4 tsp vanilla
1/2 cup granola (homemade or store bought)
1 cup blackberries
maple syrup for serving
In a large mixing bowl, combine flour, sugar, baking powder and salt.
In separate bowl, whisk together milk, eggs, and vanilla. Add to dry ingredients until just moistened.
Spoon batter in 1/4 cup portions onto lightly oiled griddle or pan. Top with 3 -4 blackberries and 1 Tbsp granola per pancake. Cook for 1 to 2 minutes or until bubbles form on top and underside is golden. Flip and cook for 1 minute.
Keep pancakes warm in oven while repeating with remaining batter.
Serve warm with maple syrup.
Yields: 8 pancakes
