Stuffed Medjool Dates w/ Manchego Cheese & Bacon Wrapped
let me introduce you to my new favourite appetizer.
the trifecta of appetizers.
bacon. cheese. dates.
heavenly.
how did this come about....
a few weeks back mr. handsome and i went on a double date with some wonderful friends to one of my favourite restaurants in the city, ox and angela.
while there, we feasted on 'the spanish table' a selection of all of the house favourites.
one of my favourite dishes from the night was the persian dates w/ serrano & manchego cheese. dates and cheese. yes please.
i think of only one way to make it better. wrap it in bacon. everything is made better with bacon. #truth
bacon + cheese + dates = best
Bacon Wrapped Medjool Dates w/ Manchego Cheese
Ingredients:
20 medjool dates
10 slices of bacon, halved
Manchego cheese, cubed
Method:
Preheat oven to 400F. Line baking sheet with tinfoil and set aside.
To prepare dates: make incision down the side of the date and gently remove pit.
Stuff each date with a cube of cheese and close tightly. Wrap date in half a slice of bacon and place on baking sheet.
Bake for 17-20 minutes or until bacon is crisp, turning once throughout.
