Bacon - Chocolate Chip Cookies
birthday month continues in our house and we are caked out. seriously caked out.

today marks mr. handsome's thirty-something birthday, in looking to score some serious points for my own upcoming birthday, i'm making a cookie that speaks to his heart...
bacon & chocolate chip.
bacon is his favourite, absolute favourite.
if there was a cologne, he'd buy it and where it daily.
happiest of birthdays to the sweetest man i know. i love you dearly and more so with each and every day. xo.

Bacon & Chocolate Chip Cookies
Ingredients:
1/2 cup + 2 Tbsp unsalted butter, softened
2 Tbsp bacon drippings
1 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
2 tsp vanilla
2 cups all-purpose flour
2 tsp cornstarch
1 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips
8 strips maple bacon, cooked & chopped
Method:
Preheat oven to 350F
In large bowl combine flour, cornstarch, baking soda, and salt. Set aside.
Cream together butter, bacon drippings, and sugars until smooth. Add egg and vanilla and blend in. Add in flour mixture and stir till combined. Fold in bacon and chocolate chips.
Roll into balls and place onto a parchment lined baking sheet. Bake for 9-11 minutes, until golden brown around the edges.
Remove from oven and let cool for 4 minutes on baking sheet before transferring to baking rack to cool completely
Yields: approximately 2 1/2 - 3 dozen
