Pulled Pork & Sweet Potato Hash

i'm a girl who will never turn down the opportunity to have a good hash. never.
perfect as breakfast, dinner, or even dessert, this was a wonderful way to use up the remainder of my Super Bowl pulled pork. #happybelly
Pulled Pork & Sweet Potato Hash
Ingredients:
2 large sweet potatoes, peeled and cut into small cubes
2 red bell peppers, chopped
1 red onion, chopped
3 cups leftover pulled pork
2 handfuls spinach
4 eggs
2 Tbsp olive oil
salt & pepper to taste
Method:
In large skillet, heat olive oil. Add sweet potato and cook for 15 minutes, or until almost tender. Add peppers, onions, and season to taste with salt & pepper. Cook for an additional 2-3 minutes. Add in pulled pork and cook for 2 minutes or until heated through. Lastly add in spinach and cook till wilted.
Meanwhile in separate skillet, crack eggs and cook to desired liking (over easy, sunny side up....)
Divide hash mixture among four plates and top each with cooked egg.
Serves: 4
