Strawberry Banana Baked Oatmeal
good morning.
oatmeal is eaten daily in our house which means i'm always playing around with different flavour combinations to avoid the dreaded breakfast rut.
no one likes a rut.

co-mingling and baking away in the oven until golden and delicious.
rut completely avoided. #winning
Strawberry Banana Baked Oatmeal
Ingredients:
3 Tbsp unsalted butter, melted and cooled slightly
2 cups old-fashioned oats
1/3 cup pecans, toasted and chopped
1/3 cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 cups unsweetened vanilla almond milk
1 large egg
1 1/2 tsp vanilla
1 banana, mashed
1 banana, sliced
1 1/4 cup strawberries, sliced
powdered sugar and fruit for serving (optional)
Method:
Preheat oven to 375 degrees. Spray an 8-inch square baking dish with non-stick spray.
Combine oats, pecans, sugar, baking powder, cinnamon, and salt in a bowl. In a separate bowl, whisk milk, egg, mashed banana, 1 1/2 tablespoons and vanilla.
Line bottom of prepared pan with sliced bananas and 3/4 cup of sliced strawberries. Cover with oat mixture. Slowly drizzle milk mixture over the oats. Gently tap dish on work surface to distribute liquid. Scatter with remaining strawberries and drizzle with remaining butter.
Bake for 45-50 minutes, until top is nicely golden and oat mixture has set. Allow to cool slightly.
Garnish with additional bananas and berries and sprinkle with powdered sugar.
